We regularly attend local and international trade shows to share experiences with fellow cheese makers and equipment manufacturers both in the US and in Europe. Our production facility is located in the dairy farm rich region of Northern California. We use fresh local milk all year round. We are accredited by the California Milk Advisory Board to proudly carry the Real California Milk Seal on our products. Some types of cheese cannot be made by machinery alone. Centuries old traditions have set the bar for quality which can only be achieved by hand making. Some of our cheeses are hand stretched to create a uniquely fine yet dense springy texture. Therefore, our hygiene protocols generally exceed the common manufacturing standards. Water used in our manufacturing process is purified by a modern filtration system to ensure that cheese properties cannot be affected. We are committed to delivering the same great tasting cheese to you every time. We pay a particular attention to following the old traditions of cheese making which have been tested by time.
